Instructions
- Start by selecting ripe pineapples. Look for ones that are slightly soft to the touch and have a sweet aroma. Cut off the top and bottom of the pineapple, then slice off the skin, making sure to remove all the eyes.
- Once peeled, chop the pineapple into chunks and place them in a blender. Blend until smooth. If you prefer a pulp-free juice, strain the mixture through a fine mesh sieve or cheesecloth into a large bowl or pitcher.
- Next, squeeze the lemons. Roll them on the countertop with your palm before cutting them in half to release more juice. Use a citrus juicer or your hands to extract the juice, making sure to catch any seeds.
- In a large pitcher or bowl, combine the fresh pineapple juice and freshly squeezed lemon juice. Stir well to combine.
- Add the granulated sugar to the juice mixture. Stir continuously until the sugar is completely dissolved. This may take a few minutes, especially if the juices are cold.
- Once the sugar is dissolved, pour in the cold water. Stir again to combine everything thoroughly.
- Cover the pitcher or bowl with plastic wrap or a lid and place it in the refrigerator. Let it chill for at least 1-2 hours to allow the flavors to meld beautifully.
- If you’re short on time, you can also chill the punch by adding ice cubes directly to the mixture, but be aware that this may dilute the punch as the ice melts.
- Remove the chilled punch from the refrigerator. Give it a gentle stir to mix everything again.
- Slowly pour in the club soda or sparkling water. Stir gently to combine, being careful not to lose too much carbonation.
- Take your fresh pineapple chunks and lemon slices. You can either add them directly to the punch or use them to garnish individual glasses.
- For a beautiful presentation, place a few mint leaves in the punch for color and aroma.
- If serving in a large bowl, consider adding a few ice cubes to keep it chilled without diluting the flavor too much.
