Instructions

  1. Start by selecting ripe pineapples. Look for ones that are slightly soft to the touch and have a sweet aroma. Cut off the top and bottom of the pineapple, then slice off the skin, making sure to remove all the eyes.
  2. Once peeled, chop the pineapple into chunks and place them in a blender. Blend until smooth. If you prefer a pulp-free juice, strain the mixture through a fine mesh sieve or cheesecloth into a large bowl or pitcher.
  3. Next, squeeze the lemons. Roll them on the countertop with your palm before cutting them in half to release more juice. Use a citrus juicer or your hands to extract the juice, making sure to catch any seeds.
  4. In a large pitcher or bowl, combine the fresh pineapple juice and freshly squeezed lemon juice. Stir well to combine.
  5. Add the granulated sugar to the juice mixture. Stir continuously until the sugar is completely dissolved. This may take a few minutes, especially if the juices are cold.
  6. Once the sugar is dissolved, pour in the cold water. Stir again to combine everything thoroughly.
  7. Cover the pitcher or bowl with plastic wrap or a lid and place it in the refrigerator. Let it chill for at least 1-2 hours to allow the flavors to meld beautifully.
