  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1 cup plain Greek yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Pita bread or lettuce leaves, for serving (optional)

Instructions

  1. Drain and rinse the chickpeas under cold water. Let them sit in a colander to drain completely.
  2. Wash the cucumber, peel if desired, cut in half lengthwise, scoop out the seeds, and dice into small cubes.
  3. Rinse and halve the cherry tomatoes. Optionally, quarter them for a different presentation.
  4. Peel and finely chop the red onion. Soak in cold water for 10 minutes if you prefer a milder flavor, then drain.
  5. Rinse and dry the parsley and dill. Remove leaves from stems and chop finely.
  6. In a mixing bowl, add the Greek yogurt.
  7. Minced the garlic and add it to the yogurt.
  8. Squeeze in the lemon juice, ensuring no seeds fall in.
  9. Drizzle in the olive oil for a smooth texture.
  10. Add salt and pepper to taste, starting with about 1/2 teaspoon of salt.
  11. Whisk or fork the dressing until creamy and smooth.
  12. In a large bowl, add the drained chickpeas.
  13. Add the diced cucumber, halved cherry tomatoes, and chopped red onion.
  14. Toss in the chopped parsley and dill.
  15. Pour the tzatziki dressing over the salad and gently fold to combine without mashing the chickpeas.
  16. Adjust seasoning as needed, adding sugar if too tangy or more salt/lemon juice if bland.
  17. Cover and refrigerate for at least 30 minutes to meld flavors.
  18. Serve on its own, with pita bread, or in lettuce leaves for a low-carb option.
  19. Optionally sprinkle additional herbs or drizzle olive oil before serving.
