- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 1 cup plain Greek yogurt
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- Salt and pepper, to taste

Instructions
- Drain and rinse the chickpeas under cold water. Let them sit in a colander to drain completely.
- Wash the cucumber, peel if desired, cut in half lengthwise, scoop out the seeds, and dice into small cubes.
- Rinse and halve the cherry tomatoes. Optionally, quarter them for a different presentation.
- Peel and finely chop the red onion. Soak in cold water for 10 minutes if you prefer a milder flavor, then drain.
- Rinse and dry the parsley and dill. Remove leaves from stems and chop finely.
- In a mixing bowl, add the Greek yogurt.
- Minced the garlic and add it to the yogurt.
- Squeeze in the lemon juice, ensuring no seeds fall in.
- Drizzle in the olive oil for a smooth texture.
- Add salt and pepper to taste, starting with about 1/2 teaspoon of salt.
- Whisk or fork the dressing until creamy and smooth.
- In a large bowl, add the drained chickpeas.
- Add the diced cucumber, halved cherry tomatoes, and chopped red onion.
- Toss in the chopped parsley and dill.
- Pour the tzatziki dressing over the salad and gently fold to combine without mashing the chickpeas.
- Adjust seasoning as needed, adding sugar if too tangy or more salt/lemon juice if bland.
- Cover and refrigerate for at least 30 minutes to meld flavors.
- Serve on its own, with pita bread, or in lettuce leaves for a low-carb option.
