- In a large mixing bowl, combine the flour, granulated sugar, baking powder, salt, and ground cinnamon. Whisk until well blended.
- In a separate bowl, whisk the eggs lightly. Add the whole milk and pure vanilla extract, mixing until combined.
- Pour the wet ingredients into the dry ingredients and gently fold together using a spatula or wooden spoon until just incorporated. A few lumps are fine!
- Add the melted unsalted butter to the dough and fold it in gently until fully incorporated.
- Cover the bowl with plastic wrap or a clean kitchen towel and let it rest for about 30 minutes at room temperature.
- In a deep pot or heavy-bottomed skillet, pour enough vegetable oil to fill it about 2-3 inches deep.
- Heat the oil over medium heat until it reaches 350°F (175°C). Use a candy thermometer or drop a small piece of dough into the oil to check readiness.
- Prepare a plate lined with paper towels for draining the beignets after frying.
- Once the oil is hot, drop spoonfuls of the dough into the oil, being careful not to overcrowd the pot.
- Fry for about 2-3 minutes on one side until golden brown, then flip and fry for an additional 1-2 minutes.
- Remove the beignets with a slotted spoon and place them on the prepared plate to drain excess oil.
- Repeat the frying process with the remaining dough, maintaining the oil temperature.
- Dust the warm beignets with powdered sugar in a large bowl or on a plate.
- Serve with chocolate sauce, fruit preserves, or a vanilla glaze for dipping.
