Instructions

  1. In a large mixing bowl, combine the flour, granulated sugar, baking powder, salt, and ground cinnamon. Whisk until well blended.
  2. In a separate bowl, whisk the eggs lightly. Add the whole milk and pure vanilla extract, mixing until combined.
  3. Pour the wet ingredients into the dry ingredients and gently fold together using a spatula or wooden spoon until just incorporated. A few lumps are fine!
  4. Add the melted unsalted butter to the dough and fold it in gently until fully incorporated.
  5. Cover the bowl with plastic wrap or a clean kitchen towel and let it rest for about 30 minutes at room temperature.
  6. In a deep pot or heavy-bottomed skillet, pour enough vegetable oil to fill it about 2-3 inches deep.
  7. Heat the oil over medium heat until it reaches 350°F (175°C). Use a candy thermometer or drop a small piece of dough into the oil to check readiness.
  8. Prepare a plate lined with paper towels for draining the beignets after frying.
  9. Once the oil is hot, drop spoonfuls of the dough into the oil, being careful not to overcrowd the pot.
  10. Fry for about 2-3 minutes on one side until golden brown, then flip and fry for an additional 1-2 minutes.
  11. Remove the beignets with a slotted spoon and place them on the prepared plate to drain excess oil.
  12. Repeat the frying process with the remaining dough, maintaining the oil temperature.
