Description
Cherry Cobbler Muffins combine soft, buttery muffin batter with a juicy cherry center and a sweet streusel topping. They’re like handheld cobblers—perfect for breakfast, brunch, or dessert!
Ingredients
– 1 ½ cups all-purpose flour
– ½ cup granulated sugar
– ½ cup brown sugar
– 2 tsp baking powder
– ½ tsp baking soda
– ½ tsp salt
– ½ cup buttermilk (or milk + 1 tsp vinegar)
– ½ cup unsalted butter, melted
– 2 large eggs
– 1 tsp vanilla extract
– ¾ cup cherry pie filling (or fresh pitted cherries)
– ½ cup all-purpose flour
– ¼ cup brown sugar
– 2 tbsp granulated sugar
– ¼ tsp cinnamon
– 3 tbsp butter, melted
– ½ cup cherry preserves or extra pie filling for topping
Instructions
1. Preheat oven to 375°F (190°C). Line a muffin pan with paper liners.
2. In a large bowl, whisk together flour, sugars, baking powder, baking soda, and salt.
3. In another bowl, mix buttermilk, melted butter, eggs, and vanilla.
4. Combine wet and dry ingredients, stirring gently until just mixed.
5. Fill muffin cups halfway with batter. Add 1 tbsp cherry pie filling into the center of each.
6. Cover with remaining batter, filling cups about ¾ full.
7. For the streusel, mix flour, sugars, cinnamon, and melted butter until crumbly. Sprinkle on top of each muffin.
8. Bake for 18–22 minutes, until a toothpick comes out clean from the muffin part.
9. Cool slightly, then top each muffin with a spoonful of cherry preserves.
Notes
– Use fresh cherries if in season (add extra sugar if tart).
– Substitute almond extract for vanilla for a cherry-almond twist.
– Freeze muffins for up to 2 months—thaw before serving.
– Add a drizzle of glaze for extra sweetness if desired.
