Description

Ingredients

– 2 cups fresh pineapple, diced  

– 1 large cucumber, sliced or diced  

– 1/4 cup red onion, thinly sliced  

– 2 tablespoons lime juice  

– 1 tablespoon honey or agave (optional)  

– 1/4 teaspoon chili powder (optional)  

– Salt and pepper to taste  

– 2 tablespoons chopped fresh cilantro or mint (optional)  


Instructions

1. In a large bowl, combine pineapple, cucumber, and red onion.  

 

2. In a small bowl, whisk together lime juice, honey (if using), chili powder, salt, and pepper.  

 

3. Pour the dressing over the pineapple and cucumber mixture. Toss gently to coat.  

 

4. Stir in fresh herbs if desired.  

 

5. Chill in the refrigerator for 10–15 minutes before serving for best flavor.

 

Notes

Use fresh, ripe pineapple for the sweetest flavor.  

English cucumber or Persian cucumbers work best for fewer seeds.  

Adjust chili powder for more or less heat.  

Swap red onion with shallots for a milder taste.  

Add avocado for a creamy twist.
