Description

Ingredients

1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon garlic powder

2 tablespoons sugar (optional)

1 cup buttermilk

2 large eggs

1/4 cup unsalted butter melted

1 cup shredded sharp cheddar cheese

2 fresh jalapeños seeded and diced

2 tablespoons chopped cilantro or parsley (optional)


Instructions

Preheat waffle iron according to manufacturer’s instructions.

In a large bowl whisk together cornmeal, flour, baking powder, baking soda, salt, garlic powder, and sugar.

In another bowl whisk together buttermilk, eggs, and melted butter.

Pour wet mixture into dry ingredients and stir until just combined.

Fold in cheddar cheese, jalapeños, and herbs if using.

Grease waffle iron with butter or cooking spray.

Ladle batter into waffle iron and cook until golden and crisp, about 4–5 minutes.

Serve warm with butter, syrup, honey, or alongside savory dishes.

Notes

Do not overmix batter or waffles will be dense.

Remove jalapeño seeds for a milder flavor.

Freeze cooked waffles for up to 2 months and reheat in toaster or oven.

Use freshly shredded cheese for the best results.
